素粽 2009.05.23

素 粽 2009/5/23


材料:尖糯米2.5斤、薏仁半斤、紅豆半斤、乾蓮子100g、雪蓮子20元、花生半斤、素鴨肉40元、栗子半斤、香菇50朵、山藥100g、粽葉100張。


調味料:香菇素蠔油、鹽巴、白胡椒粉、香油均適量。

作法:
01.粽葉須先煮過,兩面洗淨備用。
02.糯米洗淨,泡水1小時。
03.所有豆類均須泡水泡足4小時,乾蓮子除外泡水1小時就可。
04.素鴨肉以熱水泡軟、泡漲大,再把油脂擠掉,多次洗淨,切粗丁備用。
05.香菇泡軟,濾掉水分,以香油炒香+素蠔油+白胡椒粉調味。
06.第04.步驟以1/2香油、1/2橄欖油炒香+素蠔油+白胡椒粉調味。
07.花生泡過水須煮熟(煮稍軟,快鍋30分鐘,電鍋3杯水分3次入蒸過)栗子以電鍋1杯水蒸過即可。
08.山藥切粗丁,以香油、素蠔油,炒香當餡料
09.以香油、橄欖油,炒泡過水的糯米+素蠔油+白胡椒粉+鹽巴調味後+07拌勻。
10.兩張粽葉相反交叉,以漏斗狀來包粽子,05.先入+09.+08.+06.+08.,包好以粽繩綁緊。
11.快鍋備一鍋滾水,10.入,喞聲開始計時30分鐘,燜15分,即可放氣,取出粽子,即完成素粽。
